#TBT to last week’s Margot’s Pizza pop-up, the first Monday night event in our current format.
This is a WAY-WAY-WAY-off-the-menu pizza. Somehow Matt Hyland, chef-owner at Emily (Margot’s host/venue), got ahold of a quart container of meatballs from Rao’s. Yes, that Rao’s.
“After service, we’re making a family pie with some of these on it,” he said. “The ultimate one-and-done special pizza.”
Twist my arm, why don’tcha. I even forgot my own grousing on the (now defunct) Slice blog about “meatball pizzas” where the meatball is broken apart are effectively just meatchunk pizzas. 🤷♂️
The finished pizza wasn’t bad, but it needed something more than just the meatballs, which we all initially thought would carry the pie on their own.
If you ever want to know what driving a Bugatti down the block to go pick up milk tastes like, this is probably it. Better luck next time. Until then, folks, hasta la pizza 😊🍕✌️
